Country Style Sausage With Lemon Spinach and Brown Rice

This is one of my new favorite dishes to bring us from winter to spring. Still utilizing hearty produce while keeping flavors bright and fresh. This dish is perfect and quick for a healthy weeknight meal with minimal cleanup. Enjoy!
Serves: 2
Cook Time: 45 minutes
Active Time: 30 minutes
Ingredients:
Sweet Italian sausage (Casings Removed) 2
Olive Oil ½ tbsp
Shallot (Minced) 1
Garlic Cloves (Minced) 1
White Wine (Sauvignon Blac or Similar) ½ cup
Lemon (Zested & Juiced) 1
Spinach (Roughly Chopped) 4 Cups (Loosely Packed)
French Radish (Halved & Thinly Sliced) 2
Short Grain Brown Rice 1 Cup
Salt & Pepper TT
Tools:
1 Medium Pot with Lid
1 Large Skillet or Pan
1 Zester
1 Cutting Board and Knife
Directions:
Wash short grain brown rice and add to a medium pot with 2 cups of water, bring to a boil and cover. Reduce heat and simmer for 45 minutes. Turn off heat and allow to sit. This can be done while you prepare the rest of the meal.
Put your large skillet over medium heat and add olive oil, sausage, shallot and garlic. Cook until the sausage is browned and fragrant 5 - 6 minutes.
3. Deglaze the pan with white wine and add spinach, cook for 1 minute. Add lemon zest/juice and cook for another 3 - 4 minutes or until most of the cooking liquid has evaporated and the spinach is wilted.
4. Add your brown rice to a bowl and top with sausage and lemon spinach. Garnish with thinly sliced radishes. Enjoy!
